Description

In this multi-week workshop, participants will learn to forge their own custom chef’s knife and paring knife from high-carbon or stainless steel. Over the course of four sessions, you’ll explore the chemistry and craftsmanship behind blade creation—from raw steel to finished, functional kitchen tools. You’ll also gain hands-on experience using the tools of both the metal and wood shops to shape, assemble, and finish your knives for long-term performance.

This is a four-part class held weekly on Tuesdays beginning September 2.

What to Expect

Each week builds on the last as you work through the full knife-making process:

  • Week 1 – Profiling & Heat Treatment
  • Shape your raw steel and heat treat it to alter the metal’s chemistry for hardness and durability. Learn about blade anatomy and knife styles.
  • Week 2 – Beveling & Rough Shaping
  • Begin forming the cutting edge and refining the geometry of your blades using belt grinders and other metalworking tools.
  • Week 3 – Handle Shaping & Assembly
  • Design and create custom handles using woodworking tools, then attach them to your blades for a complete, ergonomic fit.
  • Week 4 – Finishing & Edge Work
  • Refine your blades, sharpen them, and learn how to care for your finished knives to maintain sharpness and longevity.

This is a hands-on, skill-building workshop. Expect to work with kilns, grinders, sanders, and saws in a supportive and guided environment.

Skills You’ll Acquire

• Understanding of blade metallurgy and heat treatment

• Use of kilns, grinders, buffing wheels, drill presses, and woodworking tools

• Knife profiling, beveling, and edge forming

• Handle shaping and knife assembly

• Knife care and long-term maintenance

What’s Provided

• High-carbon or stainless steel blanks

• Handle materials (wood, adhesives, and hardware)

• Access to metal and woodshop tools and equipment

• Instruction and support across all four sessions
